Why do liquid crystals change color under pressure?

The liquid crystals are not actually liquid. They are strands of polymers that have a flat cross section. The electrical signals twist the polymers so that they either transmit or block light. When you press in the surface of the LCD Display you are deforming the polymers and thus doing the same thing as the electrical signals do but in a less controlled manner. Why do liquid crystals change color under pressure?
I would imagine its because the pressure changes the light refraction through the crystals thus reflecting a different wavelength. Why do liquid crystals change color under pressure?
Pressure will cause a different thickness of the liquid crystal. The difference in thickness will cause a phase shift when the two reflected light wave from the front

and back surface combine.

This is analogous to a very thin layer of oil on the water surface that reflects different color like rainbow.
